Grilled Swordfish With Rosemary Recipe

Ingredients
- Swordfish steaks (4 about 4 ounce)
- Chopped fresh rosemary (2tsp)
- Minced garlic (5 cloves)
- White wine (1/2c)
- Extra virgin olive oil (1tbsp)
- lemon juice (2tbsp)
- Lemon slices for garnish (4)
- Ground black pepper (1/4tsp)
- Salt (1/4tsp)
Method Of Preparation:-
- Take a baking dish of 8 inch in square shape, add 1 teaspoon of rosemary, garlic and wine in it and then mix all the ingredients.
- Dust salt and pepper over the fish and then place it in baking dish, turn its sides to coat with the mixture. Then cover the dish with a lid and place it in the refrigerator for about 1 hour.
- Take a bowl of small size, mix rest of the rosemary, olive oil and lemon juice in it and then keep it aside. Now heat the grill for standard heat.
- Take a dish, line it with paper towel. Place fish in the dish and throw out the marinade. Grease the grill grate with oil and place fish on the grate. Grill it for about 10 minutes or until the fish gets flake easily with fork.
- Take a serving plate, place fish in it and pour lemon sauce over it with spoon and then decorate the fish with lemon slices. Now the fish is ready to serve.

- Swordfish steaks (2 pounds)
- Raisins (3 ounce)
- Capers (1/4c)
- Pine nuts (2 ounces)
- Pitted and minced green olives (10)
- Diced ripe tomatoes (1/2 pound)
- Minced garlic (1clove)
- Minced onion (1small)
- Olive oil (5tbsp)
- Pepper and salt (to taste)
Method Of Preparation For This Swordfish Recipe
- Take a small bowl, add lukewarm water in it and then soak raisins in it for about 30 minutes. Then drain the raisins and keep them aside. Now heat the oven to 200 degrees C or 400 degrees F.
- Take a large frying pan, place it over high heat and then heat olive oil in it. Add garlic and onion in the pan and saute them until they get soft. Then add capers, pine nuts, olives, tomatoes and raisins in the pan and mix them well.
- Turn down the heat to low, cover the pan and then cook the mixture for about 15 minutes. Dust salt and pepper over the fish steaks.
- Take a baking dish, grease it lightly with oil and then place the fish steaks in it. Pour the cooked sauce over the fish steaks.
- Now place the dish in oven and bake the fish steaks at 400 degrees F for about 15 to 20 minutes until the steaks get firm. Then take out the dish from oven and serve the fish hot.
Baked Mango Ginger Swordfish Recipe

Ingredients For Baked Mango Ginger Swordfish Recipe
- Swordfish steaks (2 pounds)
- Minced fresh ginger root (1tbsp)
- Dry sherry (1/2c)
- Lemon juice (2tbsp)
- Mango chutney (1c)
Method Of Preparation:-
- Take shallow bowl of large size, place swordfish steaks in it. Take a separate bowl of small size, add mango chutney, ginger, dry sherry, lemon juice in it. Mix all the ingredients and then pour this mixture over the swordfish steaks in bowl and then toss the fish with mixture to coat the steaks.
- Now cover the bowl and keep it in the refrigerator for about 1 hour to marinate the fish. Now heat the oven to 175 degrees C or 350 degrees F.
- Take a baking dish of medium size, arrange the fish steaks in it and then pour marinade to cover them. Now place the dish in oven and bake fish at 350 degrees F for about 25 to 30 minutes.
- While baking, add marinade over the fish irregularly and bake the fish until it gets flake easily with fork. When the swordfish gets ready then take it out from oven and serve it hot in serving platter.
Swordfish With Balsamic Brown Butter Sauce Recipe

- Swordfish steaks (6 about 6 ounce, each steak ¾ inch thick)
- Dijon mustard (1tbsp)
- Honey (1tbsp)
- Balsamic vinegar (3tbsp)
- Unsalted butter (1 stick about 1/2c)
- Chopped tomatoes (optional)
- Drained capers (2tbsp)
- Olive oil (1 tbsp)
- Pepper and salt (to taste)
Method Of Preparation:-
- Take a heavy saucepan of medium size, place it over medium heat and melt butter in it by swirling the pan irregularly for about 5 to 6 minutes until the butte gets golden brown color.
- Then take off the pan from heat. Then mix honey, vinegar and mustard in it and season it with pepper and salt. Rub oil on the swordfish steaks and then dust salt and pepper over them.
- Take large and heavy frying pan; place it over medium high heat. Add three steaks of swordfish in the pan and saute them for about 4 minutes on each side until they get opaque.
- Then take them out from pan and place on plate, cover the plate with foil to keep the fish warm. Then cook the rest of the steaks in the same way.
- Heat the sauce over low heat and then pour it over fish with spoon. Sprinkle tomatoes and capers over the fish and then serve it hot.
